Make juicy, flavorful Mediterranean chicken quickly in your air fryer. This recipe uses simple lemon, garlic, and herb marinade for a healthy weeknight dinner.

  • 1.5 lb boneless, skinless chicken thighs (or breasts)
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, pepper, and paprika to make the marinade.
  2. Place the chicken thighs in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Preheat your air fryer to 380°F (195°C).
  4. Remove the chicken from the marinade, letting excess drip off. Place the chicken in a single layer in the air fryer basket. Do not overcrowd the basket; cook in batches if necessary.
  5. Air fry for 15 to 18 minutes for thighs, or 12 to 15 minutes for breasts, flipping the chicken halfway through the cooking time.
  6. Check the internal temperature; the chicken is done when it reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes before serving.

  • For meal prep bowls, serve this high protein chicken with quinoa, chopped cucumbers, tomatoes, and a dollop of tzatziki sauce.
  • If using chicken breasts, pound them to an even thickness before marinating to promote even cooking.
