A juicy and flavorful London broil recipe inspired by Alton Brown, featuring a simple marinade and proper slicing technique for a delicious steak dinner.

Ingredients

Scale
  • 1 (2-pound) London broil steak
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a bowl, whisk together soy sauce, olive oil, Worcestershire sauce, Dijon mustard, minced garlic, black pepper, and dried thyme.
  2. Place the London broil steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Marinate in the refrigerator for at least 2 hours, or up to 6 hours.
  3. Preheat your broiler to high.
  4. Remove the steak from the marinade and discard the marinade. Place the steak on a broiler pan.
  5. Broil the steak for 5-7 minutes per side for medium-rare, or to your desired doneness. Use a meat thermometer to check the internal temperature (130-135°F for medium-rare).
  6. Remove the steak from the broiler and let it rest on a cutting board for 10 minutes before slicing.
  7. Slice the steak thinly against the grain for maximum tenderness.

Notes

  • For best results, marinate the steak for at least 2 hours.
  • Slicing against the grain is crucial for a tender London broil. Look for the direction of the muscle fibers and cut perpendicular to them.
  • Serve immediately with your favorite sides.
