Instructions
Mix the diced apple with 1 tablespoon of the granulated sugar and 1/4 teaspoon of the cinnamon in a small bowl. Set aside.
In a medium bowl, whisk together the flour, remaining 1 tablespoon of granulated sugar, baking powder, and remaining 1/4 teaspoon of cinnamon, and salt.
In a separate small bowl, whisk the milk, egg, and 1 teaspoon of vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. The batter will be thick.
Gently fold the diced apples into the batter.
Pour vegetable oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C).
Carefully drop the batter by rounded teaspoons into the hot oil, working in small batches to avoid overcrowding.
Fry for 2 to 3 minutes per side, turning once, until the bites are golden brown and cooked through.
Remove the fritter bites with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
While the fritters cool slightly, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a few drops at a time, if the glaze is too thick.
Dip or drizzle the warm fritter bites with the vanilla glaze. Let the glaze set before serving.
