1/4 teaspoon ground cinnamon
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a standard 12-cup muffin tin or line it with paper liners. This high initial heat helps create crispy edges on your baked apple fritters.
In a medium bowl, combine the diced apples with 1 tablespoon of the granulated sugar and 1/2 teaspoon of the cinnamon. Set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, remaining 1/2 teaspoon cinnamon, nutmeg, and the rest of the granulated sugar.
In a separate small bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine for tender fritters.
Gently fold the diced, spiced apples into the batter.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.

While the fritters bake, prepare the glaze. Whisk together the powdered sugar, 2 tablespoons milk, vanilla extract, and 1/4 teaspoon cinnamon in a small bowl until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
Let the baked apple fritters cool in the muffin tin for 5 minutes before transferring them to a wire rack.
Drizzle the warm cinnamon glaze generously over the tops of the warm fritters. Serve immediately for the best texture.
Notes
For crispier edges, you can lightly spray the tops of the batter in the muffin tin with cooking spray before baking.
If you prefer a stronger apple flavor, you can substitute 1/4 cup of the milk in the batter with apple juice.
