Enjoy these easy, oven-baked blueberry donuts for a healthier breakfast or snack. They are simple to make and perfect for kids.

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup fresh or frozen blueberries
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan well with butter or cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the milk, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
  7. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. While the donuts cool, prepare the glaze. In a small bowl, whisk together the powdered sugar and 2 tablespoons of milk until smooth. Add more milk, a teaspoon at a time, until you reach your desired consistency. Stir in the lemon zest if using.
  10. Dip the cooled donuts into the glaze, or drizzle it over the top. Let the glaze set before serving.

Notes

  • If using frozen blueberries, do not thaw them before adding to the batter.
  • For a simpler finish, you can dust the cooled donuts with powdered sugar instead of glazing them.
  • This recipe makes about 12 donuts.
