  • 1/2 cup milk
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 4 ounces Monterey Jack cheese, freshly shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly pour in the beer while whisking continuously until smooth. Cook for 2 minutes, stirring until the mixture thickens slightly.
  4. Reduce the heat to low. Gradually whisk in the milk until fully combined.
  5. Add the shredded cheddar and Monterey Jack cheese, a handful at a time, stirring until each addition is completely melted and smooth before adding more. Do not let the mixture boil.
  6. Stir in the salt, pepper, and cayenne pepper, if using.
