Learn the simple technique to make oven roasted potatoes that are golden brown and crispy outside while remaining tender inside. This easy potato side dish uses classic garlic and rosemary seasoning.

  • 3 pounds Yukon Gold or Russet potatoes, peeled and cut into 1.5-inch chunks
  • 1/4 cup olive oil
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary, crushed slightly

Instructions

  1. Preheat your oven to 425°F (220°C). Bring a large pot of salted water to a boil.
  2. Add the potato chunks to the boiling water. Cook for 8 to 10 minutes until the edges begin to soften slightly. Do not overcook.
  3. Drain the potatoes completely in a colander. Let them sit for 5 minutes to allow excess steam to escape.
  4. Gently shake the colander to rough up the edges of the potatoes. This step creates more surface area for crisping.
  5. In a large bowl, combine the olive oil and melted butter. Add the drained potatoes and toss gently to coat them evenly.
  6. In a small dish, mix the salt, pepper, garlic powder, and dried rosemary. Sprinkle this seasoning mix over the potatoes and toss again until everything is well combined.
  7. Spread the seasoned potatoes in a single layer on a large, rimmed baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness.
  8. Roast for 30 to 40 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when they are deep golden brown and crispy on the outside.
  9. Serve immediately as your easy potato side dish.

  • For extra crunch, you can add 1 teaspoon of baking soda to the boiling water during the par-boiling step.
