Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
Carefully slice each pitted date lengthwise, opening it slightly without cutting all the way through.
Stuff about 1 teaspoon of soft goat cheese into the opening of each date.
Wrap one half-slice of bacon around each stuffed date, securing the cheese inside. You may need a toothpick to hold the bacon in place if it loosens during cooking.
