Make this creamy, high-protein BLT Chicken Salad combining shredded chicken with crispy bacon, fresh tomato, and lettuce. It is a fast lunch idea perfect for meal prepping.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 4 slices bacon, cooked and crumbled
  • 1 cup chopped romaine lettuce
  • 1 large tomato, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Cook the bacon until crisp. Drain the fat and crumble the bacon. Set aside.
  2. In a large bowl, combine the shredded chicken, crumbled bacon, diced tomato, and chopped lettuce.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to create the dressing.
  4. Pour the dressing over the chicken and vegetable mixture.
  5. Gently fold all ingredients together until everything is evenly coated.
  6. Serve immediately or chill for later meal prep.

Notes

  • Use leftover rotisserie chicken to make this a no-cook chicken salad recipe.
  • For a lower-carb version, substitute Greek yogurt for half of the mayonnaise.
  • This salad works well served on lettuce cups, in wraps, or on toasted bread for a classic sandwich.
