Make this easy bruschetta dip using Boursin cheese for a creamy, flavorful appetizer perfect for parties or game days. It captures the fresh taste of bruschetta in a simple dip format.

  • 8 ounces Boursin cheese, softened
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1 pound Roma tomatoes, finely diced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • Crostini or crackers, for serving

Instructions

  1. In a medium bowl, combine the softened Boursin cheese, cream cheese, Parmesan cheese, minced garlic, and pepper. Mix until smooth and fully combined.
  2. Spread the cheese mixture evenly into the bottom of a serving dish.
  3. In a separate small bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, olive oil, and salt. Stir gently to coat the tomatoes.
  4. Spoon the tomato mixture evenly over the cheese base.
  5. Chill the dip for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve cold with toasted crostini or your favorite crackers.

Notes

  • You can prepare the tomato topping up to 4 hours ahead of time. Drain off any excess liquid before spooning it over the cheese base.
  • If you do not have Boursin, you can substitute with an equal amount of whipped feta mixed with herbs.
  • This dip is a great make ahead appetizer for entertaining guests.
