Make these simple, crowd-pleasing buffalo chicken sliders baked on Hawaiian rolls. They are perfect for game day appetizers or a fast weeknight dinner.
1.5 lbs cooked, shredded chicken (rotisserie chicken works well)
1 cup buffalo wing sauce (Frank’s RedHot recommended)
4 tablespoons unsalted butter, melted
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup cream cheese, softened
1/4 cup ranch dressing
1 cup shredded Monterey Jack or cheddar cheese
1 tablespoon poppy seeds (optional, for topping)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a medium bowl, combine the shredded chicken, buffalo wing sauce, melted butter, garlic powder, and onion powder. Mix until the chicken is fully coated.
Slice the slider rolls horizontally, keeping the rolls connected in one piece. Place the bottom half of the rolls into the prepared baking dish.
Spread the buffalo chicken mixture evenly over the bottom layer of rolls.
In a small bowl, mix the softened cream cheese and ranch dressing until smooth. Dollop this mixture over the chicken layer, spreading it gently.
Sprinkle the shredded cheese evenly over the cream cheese/ranch layer.
Place the top half of the slider rolls over the cheese.
In a small bowl, mix the melted butter with the poppy seeds (if using). Brush this mixture evenly over the top of the slider buns.
Cover the baking dish tightly with aluminum foil. Bake for 15 minutes.
Remove the foil and bake for another 5 to 10 minutes, or until the cheese is fully melted and the tops of the rolls are lightly golden brown.
Slice the sliders apart and serve immediately as a party appetizer or quick chicken sliders for dinner.
Notes
For extra flavor, you can mix 2 tablespoons of melted butter with 1 teaspoon of Worcestershire sauce and brush this over the tops instead of the poppy seed mixture.
If you prefer a tangier topping, substitute the ranch dressing with blue cheese dressing.
These sliders reheat well in the microwave for quick leftovers, but they are best served fresh from the oven.
