A creamy and flavorful one-pot pasta dish featuring Cajun spices and ranch seasoning, perfect for a quick weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup ranch dressing
  • 8 ounces penne pasta
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with Cajun seasoning, salt, and pepper. Cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in diced tomatoes, chicken broth, heavy cream, and ranch dressing. Bring to a simmer.
  4. Add penne pasta to the skillet, stirring to combine. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally.
  5. Return the cooked chicken to the skillet. Stir in cheddar cheese until melted and combined.
  6. Garnish with fresh parsley before serving.

Notes

  • For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper.
  • You can substitute chicken thighs for chicken breasts.
  • If you don’t have penne pasta, other short pasta shapes like rotini or farfalle will work.
