1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 cup chicken broth
1/2 cup heavy cream
1/4 cup ranch dressing
8 ounces penne pasta
1/4 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
Instructions
Heat olive oil in a large skillet over medium-high heat. Add chicken and season with Cajun seasoning, salt, and pepper. Cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
Stir in diced tomatoes, chicken broth, heavy cream, and ranch dressing. Bring to a simmer.
Add penne pasta to the skillet, stirring to combine. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally.
Return the cooked chicken to the skillet. Stir in cheddar cheese until melted and combined.
Garnish with fresh parsley before serving.
Notes
For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper.
You can substitute chicken thighs for chicken breasts.
If you don’t have penne pasta, other short pasta shapes like rotini or farfalle will work.
