Make this easy, one pot creamy Cajun sausage pasta for a flavorful weeknight dinner. This recipe uses smoked sausage and comes together in 30 minutes with minimal cleanup.

  • 1 pound smoked sausage or Andouille sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning (adjust for heat preference)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 3 cups chicken broth
  • 8 ounces dry pasta (penne or rotini work well)
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned, about 3 to 4 minutes. Remove the sausage with a slotted spoon and set it aside, leaving about 1 tablespoon of drippings in the pot.
  2. Add the chopped onion and bell pepper to the pot. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic, Cajun seasoning, onion powder, and black pepper. Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with their juice) and the chicken broth. Bring the mixture to a boil.
  5. Add the dry pasta to the boiling liquid. Stir well to prevent sticking. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, or until the pasta is nearly tender. Stir occasionally.
  6. Once the pasta is cooked, remove the pot from the heat. Stir in the cubed cream cheese until it melts completely into the sauce.
  7. Stir in the heavy cream and the cooked sausage. Continue stirring until the sauce is smooth and creamy.
  8. Stir in the Parmesan cheese until fully incorporated. Taste the sauce and add more Cajun seasoning if you want more spice.
  9. Serve immediately, garnished with fresh parsley. This is a simple one pot meal for busy nights.

  • For a spicier dish, use Andouille sausage and increase the Cajun seasoning to 3 teaspoons.
