4 ears of corn, husked
1/2 cup unsalted butter, softened
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
In a small bowl, combine the softened butter, minced garlic, salt, and pepper. Mix well.
If grilling: Brush the corn with the garlic butter mixture. Wrap each ear tightly in aluminum foil. Grill over medium heat for 15-20 minutes, turning occasionally, until tender. Unwrap, sprinkle with Parmesan cheese, and grill for another 2-3 minutes until the cheese is melted and bubbly.
If using the oven: Preheat your oven to 400°F (200°C). Brush the corn with the garlic butter mixture. Wrap each ear tightly in aluminum foil. Place on a baking sheet and bake for 20-25 minutes, or until tender. Unwrap, sprinkle with Parmesan cheese, and bake for another 5 minutes until the cheese is melted.
If using the stovetop: Melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Add the corn and cook, turning occasionally, until lightly browned and tender, about 10-15 minutes. Add the remaining garlic butter mixture and toss to coat. Sprinkle with Parmesan cheese and cook for 1-2 minutes until melted.
Garnish with fresh parsley, if desired.
Notes
For extra flavor, you can add a squeeze of fresh lime juice or a pinch of red pepper flakes to the butter mixture.
If you don’t have Parmesan cheese, you can use other shredded cheeses like cheddar or Monterey Jack.
