A simple and flavorful recipe for cheesy garlic butter corn on the cob, perfect for BBQs and cookouts. You can prepare it on the grill, in the oven, or on the stovetop.

  • 4 ears of corn, husked
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a small bowl, combine the softened butter, minced garlic, salt, and pepper. Mix well.
  2. If grilling: Brush the corn with the garlic butter mixture. Wrap each ear tightly in aluminum foil. Grill over medium heat for 15-20 minutes, turning occasionally, until tender. Unwrap, sprinkle with Parmesan cheese, and grill for another 2-3 minutes until the cheese is melted and bubbly.
  3. If using the oven: Preheat your oven to 400°F (200°C). Brush the corn with the garlic butter mixture. Wrap each ear tightly in aluminum foil. Place on a baking sheet and bake for 20-25 minutes, or until tender. Unwrap, sprinkle with Parmesan cheese, and bake for another 5 minutes until the cheese is melted.
  4. If using the stovetop: Melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Add the corn and cook, turning occasionally, until lightly browned and tender, about 10-15 minutes. Add the remaining garlic butter mixture and toss to coat. Sprinkle with Parmesan cheese and cook for 1-2 minutes until melted.
  5. Garnish with fresh parsley, if desired.

Notes

  • For extra flavor, you can add a squeeze of fresh lime juice or a pinch of red pepper flakes to the butter mixture.
  • If you don’t have Parmesan cheese, you can use other shredded cheeses like cheddar or Monterey Jack.
  • Ensure your butter is softened for easy mixing and spreading.
