Make flavorful, healthy chicken burrito bowls perfect for busy weeknights or stress-free meal prepping. This recipe uses simple steps to create a satisfying Southwest chicken bowl.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 packet (1 oz) low sodium taco seasoning
  • 1 cup uncooked white rice (or cauliflower rice for low carb)
  • 1.5 cups water or low sodium chicken broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen or fresh corn kernels
  • 1/2 cup chopped fresh cilantro
  • 1 lime, juiced
  • Your favorite burrito bowl toppings (salsa, avocado, sour cream, cheese)

Instructions

  1. Season the chicken: Rub the chicken breasts evenly with the taco seasoning.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side, until fully cooked (internal temperature reaches 165°F). Remove chicken, let it rest for 5 minutes, then shred or dice it.
  3. Cook the rice: In a separate saucepan, combine rice and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed. Fluff with a fork.
  4. Prepare cilantro lime rice: In a bowl, mix the cooked rice with the chopped cilantro and the juice of half the lime.
  5. Warm beans and corn: In the same skillet used for the chicken (no need to clean), add the rinsed black beans and corn. Heat for 3-4 minutes until warmed through. Stir in the remaining lime juice.
  6. Assemble the bowls: Divide the cilantro lime rice among four bowls. Top each with the seasoned chicken, the warm bean and corn mixture, and your chosen burrito bowl toppings.
  7. Meal Prep Tip: Store cooked chicken, rice, and bean/corn mixture separately in airtight containers for up to 4 days. Assemble just before eating.

Notes

  • For a copycat Chipotle chicken burrito bowl flavor, use a blend of chili powder, cumin, oregano, and garlic powder for your seasoning mix.
  • To make this a high protein chicken bowl, increase the chicken portion or add a scoop of Greek yogurt as a topping.
  • If you are making a low carb chicken burrito bowl, substitute cauliflower rice for the white rice and skip the corn.
  • You can cook the chicken in a slow cooker on low for 4 hours with 1/2 cup of broth and the seasoning, then shred it.
