Make this comforting Chicken Parmesan Soup in your slow cooker. It delivers the classic flavors of chicken parmesan in a rich, creamy, tomato-based broth, perfect for a simple weeknight dinner.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (24 ounce) jar marinara sauce
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 cup cream cheese, cut into cubes
  • 1/2 cup heavy cream
  • 1 cup shredded Parmesan cheese, plus more for topping
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1 cup small pasta, like ditalini or elbow macaroni (optional)

Instructions

  1. Place the raw chicken breasts, marinara sauce, chicken broth, diced tomatoes, Italian seasoning, garlic powder, and black pepper into your slow cooker.
  2. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  3. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  4. Stir in the cream cheese until it melts completely into the broth, creating a creamy base.
  5. Stir in the heavy cream and the 1 cup of Parmesan cheese until fully combined.
  6. If using pasta, add it now and cook on high for 15 to 20 minutes, or until the pasta is tender. If not using pasta, skip this step.
  7. Stir in the mozzarella cheese (if using) until melted. Taste and adjust seasonings if needed.
  8. Serve the soup hot, topping each bowl with extra Parmesan cheese.

Notes

  • For a quicker version, cook the chicken in a pot on the stove until done, shred it, then combine all ingredients and simmer for 20 minutes.
  • If you prefer a thicker soup, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir this slurry into the soup during the last 15 minutes of cooking.
