Make these easy chicken skewers combining sweet honey garlic and savory garlic parmesan flavors. This recipe is perfect for grilling at your next BBQ or for a quick family dinner.

  • 2 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon dried parsley
  • Wooden or metal skewers (if using wood, soak for 30 minutes)

Instructions

  1. In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, ginger, and black pepper. This is your honey garlic base.
  2. Place the cubed chicken into a large resealable bag or shallow dish. Pour half of the honey garlic marinade over the chicken, reserving the other half for basting. Seal and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. While the chicken marinates, prepare the Parmesan topping: In a small bowl, mix the grated Parmesan cheese and dried parsley. Set aside.
  4. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
  5. Thread the marinated chicken pieces onto the soaked wooden or metal skewers, leaving a small space between each piece.
  6. Place the chicken skewers on the preheated grill. Cook for 4 to 5 minutes per side.
  7. During the last few minutes of cooking, brush the skewers generously with the reserved, unused half of the honey garlic marinade. Continue grilling until the chicken is cooked through and reaches an internal temperature of 165°F.
  8. Remove the skewers from the grill. Immediately sprinkle the Parmesan and parsley mixture over the hot chicken skewers. Serve hot as a party appetizer or a quick chicken dinner idea.

Notes

  • For extra flavor, thread alternating pieces of onion or bell pepper between the chicken cubes before grilling.
  • If you prefer baking, place the skewers on a foil-lined baking sheet and bake at 400°F for 15-20 minutes, turning halfway.
