1 tablespoon olive oil
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon salt
1 teaspoon black pepper
1 medium onion, chopped
2 cloves garlic, minced
1 cup uncooked long-grain white rice
2 cups chicken broth
1/2 cup BBQ sauce
2 tablespoons chopped chipotle peppers in adobo sauce (or to taste)
1 tablespoon adobo sauce from the can
1/4 cup chopped fresh cilantro, for garnish
1/4 cup shredded cheddar cheese, for garnish (optional)
Instructions
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Stir in the uncooked rice, coating it with the oil and onion mixture. Cook for 1-2 minutes until lightly toasted.
Pour in the chicken broth, BBQ sauce, chopped chipotle peppers, and adobo sauce. Stir to combine, scraping up any browned bits from the bottom of the skillet.
Bring the mixture to a simmer. Return the browned chicken to the skillet.
Cover the skillet tightly with a lid or foil. Reduce heat to low and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let stand, covered, for 5 minutes.
Fluff the rice with a fork. Garnish with fresh cilantro and shredded cheddar cheese, if desired.
Notes
For a spicier dish, add more chipotle peppers or a pinch of cayenne pepper.
If you don’t have chicken thighs, boneless, skinless chicken breasts can be used, but cook time may vary.
Ensure your skillet has a tight-fitting lid to allow the rice to steam properly.
This recipe is easily adaptable; feel free to add other vegetables like corn or bell peppers with the onion.
