1 cup (2 sticks) unsalted butter
2 cups packed light brown sugar
1/4 cup light corn syrup
1 teaspoon ground cinnamon, plus more for dusting
1/2 teaspoon vanilla extract
2 sleeves saltine crackers or Ritz crackers
1 cup chopped pecans or walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or foil.
In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved. Bring the mixture to a boil and cook for 5 minutes, stirring occasionally.
Remove the saucepan from the heat and stir in the cinnamon and vanilla extract.
Arrange the crackers in a single layer on the prepared baking sheet.
Pour the hot caramel mixture evenly over the crackers, spreading it to cover them completely.
If using nuts, sprinkle them over the caramel immediately.
Bake for 5-7 minutes, or until the caramel is bubbly.
Remove from the oven and let cool completely on the baking sheet until the candy is firm.
Once cooled, break the candy into pieces. Dust with additional cinnamon if desired.
Notes
For best results, use fresh crackers that are not stale.
You can substitute other spices like nutmeg or cardamom for part of the cinnamon.
Store the candy in an airtight container at room temperature for up to a week.
