1 cup water
1/2 cup butter
1 tablespoon white sugar
1/4 teaspoon salt
1 cup all-purpose flour
2 large eggs
1 teaspoon vanilla extract
Vegetable oil, for frying

Instructions
In a medium saucepan, combine water, butter, 1 tablespoon sugar, and salt. Bring to a rolling boil over medium heat.
Remove from heat and immediately add flour. Stir vigorously with a wooden spoon until a smooth ball of dough forms and pulls away from the sides of the pan.
Transfer the dough to a large bowl. Let it cool for 5 minutes.
Add eggs one at a time, beating well after each addition until fully incorporated. Stir in vanilla extract.
Transfer the dough to a piping bag fitted with a large star tip.
In a deep skillet or Dutch oven, heat 2-3 inches of vegetable oil to 375°F (190°C).
Carefully pipe strips of dough, about 4-6 inches long, directly into the hot oil. Do not overcrowd the pan.
Fry for 2-3 minutes per side, until golden brown and crispy.
Using a slotted spoon, remove churros from the oil and drain on paper towels.
In a shallow dish, combine 1/2 cup sugar and cinnamon. Toss the warm churros in the cinnamon-sugar mixture until evenly coated.
Serve immediately with your favorite dipping sauce.

For a richer flavor, you can add a pinch of nutmeg to the cinnamon-sugar mixture.
