3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter, plus more for the griddle
1/2 cup brown sugar, packed
2 teaspoons ground cinnamon
1/4 cup cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1–2 tablespoons milk (for glaze)
Instructions
Prepare the cinnamon swirl mixture: In a small bowl, combine the brown sugar and ground cinnamon. Set aside.
Prepare the cream cheese glaze: In a separate small bowl, whisk together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Add 1 to 2 tablespoons of milk until you reach a drizzly consistency. Set aside.
Make the pancake batter: In a large bowl, whisk together the flour, baking powder, salt, and white sugar.
In a medium bowl, whisk together the milk, egg, and 3 tablespoons of melted butter.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine for fluffy pancakes.
Heat a griddle or large non-stick skillet over medium heat. Lightly grease with butter.
Pour about 1/4 cup of batter onto the hot griddle for each pancake.
Immediately sprinkle about 1 teaspoon of the cinnamon sugar mixture evenly over the wet batter of each pancake.
Cook for 2 to 3 minutes until bubbles appear on the surface and the edges look set.
Flip the pancakes carefully and cook for another 1 to 2 minutes until golden brown and cooked through.
Stack the warm pancakes and drizzle generously with the cream cheese glaze. Serve immediately.
Notes
For extra fluffy pancakes, let your batter rest for 5 minutes before cooking.
If your glaze thickens while you are cooking, whisk in a few drops of milk to thin it out again.
You can use a boxed pancake mix to save time, following the package directions for the batter, then adding the cinnamon swirl.
