Make these soft, custardy Cinnamon Sugar French Toast Muffins. They taste like your favorite café breakfast but are simple to prepare for a quick grab-and-go meal or weekend brunch.

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar, plus 1/4 cup for topping
  • 1/2 cup (1 stick) unsalted butter, melted, plus 2 tablespoons for topping
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1/2 cup cubed day-old bread (optional, for texture)

Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk together the 1/2 cup sugar, melted butter, egg, milk, vanilla extract, and heavy cream until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix only until just combined; do not overmix. If using, gently fold in the cubed bread.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Prepare the topping: In a small bowl, mix the remaining 1/4 cup sugar with the remaining 2 tablespoons of melted butter until it forms a coarse, wet mixture.
  7. Spoon the cinnamon sugar topping evenly over the top of the batter in each muffin cup.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Using day-old brioche or challah bread cubes adds a wonderful custardy texture reminiscent of true French toast.
  • For the best cinnamon sugar crunch, apply the topping just before baking.
  • These muffins are excellent served slightly warm.
