4 cups arugula, washed and dried
2 large navel oranges, peeled and segmented
2 blood oranges, peeled and segmented
1 cup fresh grapefruit segments
1/2 cup toasted pecans or pistachios
1/4 cup crumbled feta cheese (optional)
1 small shallot, minced
3 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 cup extra virgin olive oil
Salt and black pepper to taste
Instructions
Prepare the citrus fruits by peeling them completely, removing all white pith. Slice between the membranes to release the segments over a bowl to catch any juice. Set the segments aside.
In a small bowl, whisk together the minced shallot, orange juice, lemon juice, honey, and Dijon mustard. This forms the base of your citrus vinaigrette.
Slowly drizzle in the olive oil while whisking constantly until the vinaigrette emulsifies slightly. Season with salt and pepper.
In a large bowl, place the washed and dried arugula.
Gently pour about half of the vinaigrette over the arugula and toss lightly to coat the greens. Add more dressing as needed, but avoid oversaturating the leaves.
Arrange the segmented oranges and grapefruit over the dressed arugula.
Sprinkle the toasted nuts and optional feta cheese over the top of the salad.
Drizzle any remaining citrus juice from the fruit bowl over the salad just before serving. Serve immediately for the best texture.
Notes
To toast nuts, spread them on a dry skillet over medium heat for 3-5 minutes, stirring often until fragrant. Watch them closely to prevent burning.
If you prefer a sweeter dressing, increase the honey by one teaspoon.
