Make ultra rich, fudgy, and chewy homemade Cosmic Brownies that taste better than the store-bought version. This recipe uses simple ingredients and includes the signature chocolate ganache and rainbow sprinkles.

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for brownie batter)
  • 1 cup powdered sugar (for frosting)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup milk or heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup butter, softened (for frosting)
  • 1/2 cup rainbow candy-coated sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  9. Let the brownies cool completely in the pan on a wire rack.
  10. Prepare the frosting: In a medium bowl, beat the softened butter until creamy. Gradually beat in the powdered sugar and cocoa powder, alternating with the milk/cream and vanilla extract until the frosting is smooth and spreadable.
  11. Spread the chocolate frosting evenly over the cooled brownies.
  12. Immediately sprinkle the rainbow candy-coated sprinkles over the frosting before it sets.
  13. Chill the brownies for at least 30 minutes to allow the frosting to firm up slightly.
  14. Lift the brownies out of the pan using the parchment overhang and cut into squares.

Notes

  • For extra fudgy brownies, slightly underbake them by about 2 minutes.
  • If you prefer a thicker layer of frosting, double the frosting recipe ingredients.
  • You can use M&M’s instead of traditional rainbow sprinkles for a similar look.
