Make light, airy, and high-protein cottage cheese cloud bread. This simple recipe offers a satisfying, low-carb, gluten-free bread alternative perfect for keto diets or quick snacks.

  • 1 cup low-fat cottage cheese
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Place the cottage cheese and egg yolks into a food processor or blender. Process until the mixture is completely smooth, scraping down the sides as needed.
  3. In a separate, clean bowl, beat the egg whites with the cream of tartar and salt using an electric mixer until stiff peaks form.
  4. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites until just combined. Do not overmix; you want to keep the mixture airy.
  6. Drop the batter onto the prepared baking sheet in four equal mounds, shaping them into rounds like buns.
  7. Bake for 25 to 30 minutes, or until the tops are lightly golden and the bread is firm to the touch.
  8. Remove from the oven and let cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.

Notes

  • For a sweeter version, fold in 1 teaspoon of cinnamon or a small handful of fresh blueberries with the final egg whites.
  • You can use this cloud bread as a low-carb sandwich bread base or toast it lightly before serving.
