Make this creamy, cheesy, high-protein cottage cheese queso dip in under five minutes using just a blender. It is a healthy, low-carb cheese sauce alternative perfect for snacking or topping nachos.

Ingredients

  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup Rotel (diced tomatoes and green chilies, undrained)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of salt

Instructions

  1. Place the cottage cheese, shredded cheddar cheese, Rotel (with liquid), garlic powder, onion powder, and salt into a high-speed blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed. This should take about 1 to 2 minutes.
  3. Pour the blended mixture into a microwave-safe bowl.
  4. Microwave on high for 30 to 60 seconds, stirring halfway through, until the queso is heated through and extra smooth. Do not overheat.
  5. Serve immediately with tortilla chips, vegetables, or as a nacho topping.

Notes

  • For a spicier dip, add 1/4 teaspoon of chili powder or a dash of your favorite hot sauce to the blender.
  • If the dip is too thick after microwaving, add a teaspoon of milk or water and stir until you reach your desired consistency.
