Ingredients
Scale
8 ounces cream cheese, softened
1/4 cup dried cranberries, chopped
2 tablespoons chopped fresh chives or green onions
1/4 teaspoon salt
1/8 teaspoon black pepper
4 large (10-inch) flour tortillas
Optional: 1/4 cup crumbled feta cheese
Instructions
In a medium bowl, beat the softened cream cheese until smooth.
Stir in the chopped dried cranberries, chives (or green onions), salt, and pepper. If using, mix in the crumbled feta cheese.
Spread about one-fourth of the cream cheese mixture evenly over each tortilla, leaving a small border around the edges.
Tightly roll up each tortilla, starting from one edge.
Wrap each rolled tortilla tightly in plastic wrap.
Refrigerate for at least 1 hour, or until firm enough to slice. This step is crucial for clean cuts.
To serve, unwrap the chilled tortillas and slice them into 1/2-inch thick pinwheels.
Arrange the cranberry pinwheels on a serving platter.
Notes
For best results, chill the rolled tortillas for at least 2 hours.
You can substitute other dried fruits like cherries or apricots for the cranberries.
Add a pinch of garlic powder to the cream cheese mixture for extra flavor.
Serve with a side of salsa or a light dip for added variety.
