Make this rich, cheesy, and comforting Creamy Crack Chicken Gnocchi in one pot. This easy recipe delivers a satisfying meal perfect for cozy nights and busy weeknights.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1 cup chicken broth
  • 8 ounces cream cheese, cubed
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken and set it aside.
  3. Add the crumbled bacon to the skillet and cook for 1 minute to warm it slightly.
  4. Add the gnocchi and chicken broth to the skillet. Bring the mixture to a simmer, then reduce the heat to medium-low. Cook, stirring occasionally, until the gnocchi is tender, about 5 minutes.
  5. Stir in the cream cheese, ranch seasoning mix, and heavy cream. Stir constantly until the cream cheese melts and the sauce becomes smooth and creamy.
  6. Return the cooked chicken to the skillet. Stir in the shredded cheddar cheese until it melts into the sauce.
  7. Add the fresh spinach and stir until it wilts into the sauce, about 1 minute.
  8. Taste the dish and add more salt and pepper if needed. Serve immediately for an indulgent dinner.

Notes

  • For a thicker sauce, allow the mixture to simmer uncovered for an extra minute or two before adding the spinach.
  • You can substitute turkey bacon for traditional bacon if you prefer.
  • This dish reheats well, but you may need to add a splash of milk or broth when reheating to restore the creamy texture.
