Make this hearty Crockpot Cowboy Soup for a satisfying, comforting meal. This slow cooker recipe uses ground beef, beans, and vegetables, requiring minimal prep time for busy weeknights.

Ingredients

  • 1.5 lbs ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional Toppings: Shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
  2. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 more minute until fragrant.
  3. Transfer the cooked beef and onion mixture to your slow cooker.
  4. Add the rinsed beans, drained corn, diced tomatoes, Rotel, cream of mushroom soup, beef broth, chili powder, cumin, and oregano to the slow cooker.
  5. Stir all ingredients together until well combined. Season with salt and pepper.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  7. Stir the soup before serving. Taste and adjust seasonings if needed.
  8. Serve hot with your choice of toppings.

Notes

  • For a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir into the soup during the last 30 minutes of cooking.
  • If you prefer a Creamy Cowboy Soup Variation, stir in 1/2 cup of shredded cheddar cheese during the last 15 minutes of cooking.
  • This recipe works well as a Make Ahead Soup for Busy Weeknights since leftovers store well.
