  • 1 pound ground beef
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup broken lasagna noodles
  • 1/2 cup water
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 cup shredded mozzarella cheese, plus more for topping
  • Fresh basil for garnish

Instructions

  1. Place the ground beef, marinara sauce, crushed tomatoes, beef broth, Italian seasoning, garlic powder, oregano, and red pepper flakes (if using) into your slow cooker.
  2. Stir all ingredients together until combined.
  3. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours.
  4. About 30 minutes before serving, stir in the broken lasagna noodles and the 1/2 cup of water.
  5. Continue cooking on high until the noodles are tender, about 20 to 30 minutes.
  6. Remove the slow cooker insert from the heat. Stir in the ricotta cheese and Parmesan cheese until they are mostly melted into the soup, creating a creamy texture.
  7. Ladle the Crockpot Lasagna Soup into bowls. Top each serving with shredded mozzarella cheese, extra Parmesan, and fresh basil. Serve immediately.

Notes

  • For a richer flavor, brown the ground beef in a skillet before adding it to the slow cooker. Drain any excess fat first.
