Easy Cranberry Brie Bites with Puff Pastry

Make these simple, elegant cranberry brie bites using puff pastry for a perfect holiday finger food that requires minimal effort.

  • 1 sheet frozen puff pastry, thawed
  • 8 ounces brie cheese, cold and cut into small cubes
  • 1/2 cup canned whole-berry cranberry sauce
  • 1 large egg, beaten (for egg wash)
  • Optional: Chopped pecans or a drizzle of honey for topping

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin.
  2. Unfold the thawed puff pastry sheet on a lightly floured surface. Use a round cookie cutter (about 2.5 to 3 inches in diameter) to cut out circles from the pastry. You should get about 12 circles.
  3. Gently press each pastry circle into the cups of the prepared muffin tin, forming a small cup shape.
  4. Place one cube of brie cheese into the bottom of each pastry cup.
  5. Top the brie with about 1 teaspoon of cranberry sauce. If using pecans, sprinkle a few on top now.
  6. Brush the exposed edges of the puff pastry with the beaten egg wash. This helps them brown nicely.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed, and the brie cheese is melted and gooey.
  8. Carefully remove the brie bites from the muffin tin using a small offset spatula or butter knife. Let them cool slightly before serving warm.

Notes

  • If you prefer a savory-sweet profile, substitute the cranberry sauce with fig jam and add a small piece of prosciutto before baking.
  • For a quicker assembly, you can use refrigerated crescent roll dough instead of puff pastry; press squares into the muffin tin cups.
  • These are best served warm, shortly after they come out of the oven, when the cheese is fully melted.
