  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons unsalted butter

Instructions

  1. Combine the sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and allspice in a large, heavy-bottomed saucepan. Toss gently to coat the apples evenly.
  2. Add the water to the saucepan. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the apples begin to soften slightly, about 5 to 7 minutes.
  3. In a small bowl, whisk the cornstarch with 2 tablespoons of cold water until smooth to create a slurry.
  4. Pour the cornstarch slurry into the simmering apple mixture, stirring constantly. Continue to cook, stirring, until the filling thickens significantly, about 1 to 2 minutes. It should coat the back of a spoon.
  5. Remove the pan from the heat. Stir in the butter until it melts completely, adding richness and shine to the filling.
  6. Let the apple pie filling cool for at least 15 minutes before using it in your pie crust or dessert. This cooling period helps the filling set further.
