1.5 lbs skirt steak or flank steak
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
12 small corn tortillas or flour tortillas
For Topping: Chopped white onion, fresh cilantro, lime wedges, desired salsa
Instructions
Pat the steak dry with paper towels. In a small bowl, mix together the cumin, chili powder, garlic powder, onion powder, oregano, salt, and pepper to create the seasoning mix.
Rub the seasoning mix evenly over both sides of the steak.
Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering.
Place the seasoned steak in the hot skillet. Sear for 3 to 5 minutes per side for medium-rare, depending on steak thickness. You want a nice char on the outside.
Remove the steak from the skillet and place it on a cutting board. Let the steak rest for 5 to 10 minutes before slicing. This keeps the steak juicy.
While the steak rests, warm your tortillas. You can warm them directly over a low gas flame for a few seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds, or heat them in a dry skillet.
Slice the rested steak thinly against the grain into bite-sized strips.
Assemble your steak tacos by filling each warm tortilla with sliced steak. Top with chopped onion, cilantro, and serve immediately with lime wedges and your favorite salsa.
Notes
For extra flavor, marinate the seasoned steak in the refrigerator for at least 30 minutes or up to 4 hours before cooking.
