2 teaspoons baking powder

1 large egg
1 cup milk
1/4 cup melted butter or oil

1 cup mashed ripe bananas (about 2 medium bananas)
Instructions
Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl. Whisk these dry ingredients together.
In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
Add the wet ingredients to the dry ingredients. Mix until just combined; do not overmix the batter. A few lumps are fine.
Gently fold in the mashed ripe bananas.
Heat a lightly oiled griddle or large non-stick pan over medium heat.
Pour batter onto the hot griddle to form pancakes of your desired size.
Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the other side until done.
