A quick and simple fruit pizza using refrigerated sugar cookie dough, cream cheese frosting, and fresh fruit. Perfect for a fast dessert.

  • 1 (16.5 ounce) package refrigerated sugar cookie dough
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh fruit, sliced or chopped (e.g., strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly onto the bottom of a 12-inch pizza pan or a baking sheet.
  3. Bake for 12-15 minutes, or until the edges are golden brown and the center is set. Let the cookie crust cool completely.
  4. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  6. Arrange your prepared fresh fruit over the frosting to create your desired design.
  7. Chill the fruit pizza for at least 30 minutes before slicing and serving.

Notes

  • For mini fruit pizzas, use pre-made mini sugar cookies or press dough into small circles on a baking sheet.
  • You can use canned fruit, but drain it very well to prevent a soggy crust.
  • Add a drizzle of honey or a sprinkle of shredded coconut for extra flavor and texture.
  • Consider using a piping bag with a star tip to create decorative borders with the cream cheese frosting.
