A vibrant fall salad featuring crisp Honeycrisp apples, creamy feta cheese, crunchy nuts, and mixed greens, all tossed in a simple balsamic vinaigrette. Perfect for weeknight lunches or as a festive Thanksgiving side dish.

  • 4 cups mixed greens
  • 2 Honeycrisp apples, cored and thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, sliced apples, crumbled feta cheese, and toasted nuts.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey. Season with salt and pepper.
  3. Pour the vinaigrette over the salad ingredients.
  4. Toss gently to coat everything evenly.
  5. Serve immediately.

Notes

  • For extra crunch, toast your nuts in a dry skillet over medium heat for 3-5 minutes, or until fragrant.
  • If you don’t have Honeycrisp apples, Fuji or Gala apples also work well.
  • Pecans can be substituted for walnuts for a different nutty flavor.
  • This salad can be made ahead of time; store the vinaigrette separately and toss just before serving to prevent the greens from wilting.
