A cold pasta salad featuring tortellini, deli meats, and peppers with a creamy Italian dressing, inspired by the viral grinder sandwich.

  • 1 (20 ounce) package cheese tortellini
  • 1/2 pound thinly sliced ham
  • 1/2 pound thinly sliced salami
  • 1/2 pound thinly sliced pepperoni
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 1/2 cup chopped red onion
  • 1/2 cup chopped pepperoncini peppers
  • 1 cup mayonnaise
  • 1/2 cup Italian dressing
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Cook tortellini according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked tortellini, ham, salami, pepperoni, red bell pepper, green bell pepper, red onion, and pepperoncini peppers.
  3. In a separate small bowl, whisk together the mayonnaise, Italian dressing, Parmesan cheese, oregano, and garlic powder.
  4. Pour the dressing mixture over the tortellini and meat mixture. Toss gently to combine.
  5. Season with salt and black pepper to taste.
  6. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For best results, make this salad a few hours ahead of time or the day before.
  • You can substitute other deli meats like turkey or roast beef.
  • Add a pinch of red pepper flakes for a little heat.
  • This salad is great for picnics and potlucks.
