Make this hearty, one-pot creamy Italian sausage soup featuring tender potatoes and fresh spinach. It is a filling comfort food perfect for a weeknight dinner.

Ingredients

  • 1 pound Italian sausage (sweet or hot)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium potatoes, peeled and diced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 3 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Brown the Italian sausage in a large pot or Dutch oven over medium heat. Drain off excess grease.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the diced potatoes, diced tomatoes (with juice), oregano, basil, and red pepper flakes if using.
  5. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream and cubed cream cheese until the cheese melts and the broth becomes creamy.
  7. Add the fresh spinach and stir until it wilts into the soup.
  8. Stir in the Parmesan cheese. Season with salt and pepper to your preference.
  9. Serve hot with crusty bread.

Notes

  • For a thicker soup, mash a few of the cooked potatoes against the side of the pot before adding the cream.
  • If you prefer a different pasta, you can substitute 1/2 cup of ditalini or small shell pasta for the potatoes, adding it when you add the broth and cooking until al dente.
  • Use spicy Italian sausage for a kick, or sweet Italian sausage for a milder flavor.
