  • 1 box white cake mix
  • Ingredients required by cake mix (usually eggs, oil, water)
  • 1 package (3 oz) flavored gelatin (Jello)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 container (8 oz) whipped topping (Cool Whip), thawed

Instructions

  1. Prepare and bake the white cake according to the package directions using a 9×13 inch baking pan.
  2. Let the cake cool in the pan for about 15 minutes.
  3. While the cake is still warm, use the handle of a wooden spoon or a large fork to poke holes all over the surface of the cake. Make the holes about 1 inch apart.
  4. In a separate bowl, dissolve the gelatin powder completely in the boiling water. Stir for 2 minutes.
  5. Stir in the cold water.
  6. Carefully and slowly pour the liquid gelatin mixture evenly over the entire surface of the warm cake, allowing it to soak into the poked holes.
  7. Refrigerate the cake uncovered for at least 3 to 4 hours, or until the gelatin is completely set.
  8. Once the gelatin is set, spread the thawed whipped topping evenly over the top of the cake.
  9. Chill the cake for at least 30 minutes before slicing and serving.

Notes

  • For a richer flavor, use a yellow cake mix instead of white.
  • You can use any flavor of gelatin you prefer for different colors and tastes.
  • To make this a Christmas Jello Poke Cake, use red and green Jello layers, alternating colors after the first layer sets slightly.
  • This is a great make ahead dessert; it tastes best when made the day before serving.
