1.5 lbs carrots, peeled and sliced into 1-inch pieces
3 tbsp unsalted butter
1/4 cup packed brown sugar
3 tbsp pure maple syrup
1/4 tsp salt
1/8 tsp black pepper
Optional garnish: Chopped fresh parsley
Instructions
Place the sliced carrots in a large skillet with 1/2 inch of water. Bring the water to a boil over high heat, then reduce heat to medium-low, cover, and cook for 5 to 7 minutes until the carrots are tender-crisp. Drain the water completely.
Add the butter, brown sugar, maple syrup, salt, and pepper to the skillet with the carrots.
Increase the heat to medium. Cook, stirring frequently, until the sugar dissolves and the liquid thickens into a glaze that coats the carrots, about 4 to 6 minutes. Watch closely to prevent burning.
Remove from heat. Toss the carrots gently to coat them evenly in the glaze.
Transfer the carrots to a serving dish. Garnish with fresh parsley, if desired.
Notes
For roasting, toss the raw carrots with the butter, brown sugar, and maple syrup mixture. Roast at 400°F for 20 to 25 minutes, stirring halfway through, until tender and caramelized.
