Make this simple marinated cheese appetizer ahead of time for your next gathering. These flavor-infused cheese cubes use common ingredients for a gourmet party cheese platter component.

  • 1 (8 ounce) block sharp cheddar cheese, cut into 1/2 inch cubes
  • 1 (8 ounce) block Monterey Jack cheese, cut into 1/2 inch cubes
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the cheddar and Monterey Jack cheese cubes into a medium, non-reactive container or a large zip-top bag.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, minced garlic, parsley, basil, oregano, red pepper flakes, salt, and pepper to create the garlic and herb cheese marinade.
  3. Pour the marinade over the cheese cubes, ensuring all pieces are coated.
  4. Seal the container or bag and gently toss to distribute the marinade evenly.
  5. Refrigerate the marinated cheese for at least 4 hours, or preferably overnight, to allow the cheese to absorb the flavor.
  6. When ready to serve, let the cheese sit at room temperature for 15 minutes before presenting it on a party cheese platter with crackers or pita chips.

Notes

  • For a different texture, you can use a combination of cream cheese and cheddar, cutting the cream cheese into cubes after chilling it thoroughly.
  • This is an excellent make ahead cheese tray item; it tastes better the longer it marinates, up to 3 days.
