12 large eggs
1 cup soy sauce
1 cup water
1/2 cup brown sugar
1/4 cup rice vinegar
4 cloves garlic, minced
2 green onions, thinly sliced
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional, for spice)
Instructions
Gently place the eggs in a saucepan and cover them with cold water. Bring the water to a rolling boil over high heat.
Once boiling, immediately turn off the heat, cover the pan, and let the eggs sit for exactly 6 minutes for jammy yolks.
Prepare an ice bath by filling a large bowl with ice and cold water. Immediately transfer the eggs to the ice bath to stop the cooking process. Let them cool completely, about 10 minutes.
Carefully peel the cooled eggs.
In a medium, non-reactive container (like a glass jar or zip-top bag), combine the soy sauce, water, brown sugar, rice vinegar, minced garlic, sliced green onions, sesame oil, and red pepper flakes if using. Stir until the sugar dissolves.
Place the peeled eggs into the marinade, ensuring they are fully submerged.
Seal the container and refrigerate. Marinate the eggs for a minimum of 6 hours, but overnight is best for maximum flavor absorption.
When serving, slice the eggs in half and drizzle a little of the marinade over the yolks.
Notes
For the best jammy yolk texture, use eggs that are about one week old, as very fresh eggs are harder to peel.
Refrigerate the marinated eggs in their liquid for up to 5 days.
