Make this hearty, family-friendly meatloaf casserole combining savory meatloaf, creamy mashed potatoes, and a melted cheese topping. It is a quick comfort food dinner perfect for busy weeknights.

  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 lbs pre-made mashed potatoes (or homemade)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ketchup (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, Worcestershire sauce, and thyme. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base layer.
  4. Spread the mashed potatoes evenly over the meatloaf layer.
  5. In a small bowl, mix the cheddar and mozzarella cheeses together. Sprinkle the cheese mixture over the mashed potatoes.
  6. Spread the ketchup evenly over the cheese layer.
  7. Bake for 45 minutes, or until the meat is cooked through and the cheese is melted and bubbly.
  8. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • You can prepare the meatloaf base and mashed potatoes ahead of time. Assemble the casserole, cover it, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if cooking directly from the refrigerator.
  • For a ‘loaded’ flavor, mix 1/2 cup of cooked, crumbled bacon bits into the mashed potatoes before layering.
  • Use your favorite ground meat blend, such as a mix of beef and pork, for different flavor profiles.
