A bright and fluffy rice side dish infused with lemon and fresh herbs, perfect for pairing with grilled meats, seafood, or vegetable mains.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add the rinsed rice and toast for 1-2 minutes, stirring constantly, until fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  5. Remove from heat and let stand, covered, for 5 minutes.
  6. Fluff the rice with a fork.
  7. Stir in the chopped parsley, dill, lemon zest, and lemon juice.
  8. Season with salt and pepper to taste.
  9. Serve immediately.

Notes

  • For extra lemon flavor, you can add more zest or juice.
  • Feel free to substitute other fresh herbs like mint or chives.
  • Ensure your rice is well-rinsed to remove excess starch for a fluffier texture.
