Make these light, crunchy, and savory Mediterranean Spinach and Feta Cheese Crisps. They are quick to prepare, perfect as party finger foods, or for healthy Mediterranean snacking.

  • 10 sheets phyllo dough, thawed
  • 1 tablespoon olive oil, plus extra for brushing
  • 1 cup fresh spinach, finely chopped
  • 4 ounces feta cheese, crumbled
  • 1/4 teaspoon dried oregano
  • Pinch of black pepper
  • 1 egg white, lightly beaten

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a small bowl, combine the chopped spinach, crumbled feta cheese, dried oregano, and black pepper. Mix gently until the ingredients are just combined.
  3. Lay one sheet of phyllo dough flat on your work surface. Brush the entire surface lightly with olive oil.
  4. Place a second sheet of phyllo dough directly on top of the first sheet. Brush this top sheet lightly with olive oil as well.
  5. Place about 1.5 tablespoons of the spinach and feta mixture along one short edge of the stacked phyllo sheets, leaving a small border.
  6. Fold the short edge over the filling once. Then, fold in the long sides toward the center to create a tight seal around the filling.
  7. Roll the filled dough tightly away from you, creating a small, crisp log or cigar shape.
  8. Brush the outside of the roll lightly with the beaten egg white. This helps it brown and seal.
  9. Place the finished crisp seam-side down on the prepared baking sheet. Repeat this process with the remaining phyllo sheets and filling mixture.
  10. Bake for 12 to 15 minutes, or until the crisps are golden brown and flaky.
  11. Remove from the oven and let cool slightly before serving warm.

Notes

  • For extra crispiness, you can brush the tops with a little more olive oil before baking.
  • If you do not have fresh spinach, you can use 1/2 cup of thawed, well-drained frozen spinach. Squeeze out all excess moisture.
  • These savory bites are excellent served with a side of plain Greek yogurt or a light tzatziki sauce.
