Make incredibly light and tender oatmeal pancakes using a blender. This flourless recipe is quick, healthy, and avoids dense texture, giving you a satisfying breakfast in minutes.

Ingredients

Scale
  • 1 cup rolled oats (old-fashioned or quick-cooking)
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup or sweetener of choice
  • 1/4 teaspoon ground cinnamon (optional)
  • Cooking spray or butter for the griddle

Instructions

  1. Place the rolled oats into a high-speed blender. Blend on high until the oats turn into a fine powder, resembling oat flour. This step is key for fluffiness.
  2. Add the milk, eggs, baking powder, vanilla extract, maple syrup, and cinnamon (if using) to the blender with the oat flour.
  3. Blend the mixture until it is completely smooth, about 30 to 45 seconds. Do not overmix once combined.
  4. Let the batter rest on the counter for 5 minutes. This allows the oat flour to fully absorb the liquid, improving texture.
  5. Heat a non-stick griddle or large skillet over medium heat. Lightly coat the surface with cooking spray or butter.
  6. Pour the batter onto the hot griddle to form pancakes of your desired size. For medium pancakes, use about 1/4 cup of batter per pancake.
  7. Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip carefully.
  8. Serve your fluffy oatmeal pancakes immediately with your favorite toppings.

Notes

  • For gluten-free pancakes, confirm your rolled oats package states they are certified gluten-free.
  • If you want protein oatmeal pancakes, add 1/4 cup of cottage cheese or Greek yogurt to the blender with the wet ingredients.
  • If you prefer pancakes without banana, this recipe already omits it, focusing on oat texture.
  • For a make-ahead breakfast, you can store leftover pancakes in an airtight container in the refrigerator for up to 3 days. Reheat in the toaster or microwave.
