  • 1 teaspoon dried Italian seasoning

  • 1 cup heavy cream
  • 1 cup cooked, shredded chicken breast
  • 1 (16 ounce) package potato gnocchi
  • 2 cups fresh spinach, packed
  • 1/4 cup grated Parmesan cheese (optional, for garnish)

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic to the pot and cook for 1 minute until fragrant.
  3. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste. This creates your roux base.
  4. Slowly whisk in the chicken broth until the mixture is smooth and there are no lumps. Stir in the Italian seasoning, salt, and pepper.
  5. Bring the broth mixture to a simmer. Reduce the heat to medium-low and let it cook gently for about 5 minutes, allowing the vegetables to finish cooking and the broth to thicken slightly.
  6. Stir in the heavy cream and the shredded chicken. Heat through, but do not let the soup boil once the cream is added.
  7. Add the potato gnocchi to the soup. Cook according to the package directions, usually about 3 to 5 minutes, until the gnocchi float to the surface.
  8. Stir in the fresh spinach until it wilts into the soup, which takes about 1 minute.
  9. Taste the soup and adjust salt and pepper if needed. Serve immediately, garnished with Parmesan cheese if you wish.
