Creamy Parmesan One Pot Chicken and Rice

Make this easy weeknight dinner that delivers tender chicken and fluffy rice in one pot, minimizing cleanup. This comforting dish features savory Parmesan cheese for a satisfying meal.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen peas and carrots mix

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil and butter in a large, deep skillet or Dutch oven over medium-high heat.
  3. Add the chicken and cook until lightly browned on all sides, about 4 to 5 minutes. Remove the chicken from the pot and set it aside.
  4. Reduce the heat to medium. Add the chopped onion to the pot and cook until softened, about 3 minutes.
  5. Add the minced garlic and cook for 1 minute until fragrant.
  6. Stir in the uncooked rice, Italian seasoning, salt, and pepper. Cook for 1 minute, stirring constantly.
  7. Pour in the chicken broth. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pot.
  8. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the rice is mostly tender and most of the liquid is absorbed. Do not lift the lid during this time.
  9. Stir the cooked chicken back into the rice mixture.
  10. Stir in the heavy cream and frozen peas and carrots. Cook uncovered over low heat for 3 to 5 minutes, stirring gently until the vegetables are heated through and the sauce has thickened slightly.
  11. Remove the pot from the heat. Stir in the grated Parmesan cheese until melted and creamy.
  12. Serve immediately as a complete meal in one pot.

Notes

  • For extra flavor, use garlic butter instead of plain butter and olive oil in step 2.
  • If you prefer a thicker sauce, let the mixture simmer uncovered for an extra few minutes at the end.
  • You can substitute chicken thighs for breasts, but adjust the initial cooking time slightly.
