Make this quick, crunchy pecan pie bark using graham crackers and a buttery toffee layer. It requires no baking and captures classic pecan pie flavor in a simple, breakable candy form.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 box (14.4 ounces) graham crackers, whole sheets
  • 1 1/2 cups chopped pecans, lightly toasted
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a medium saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the butter melts and the sugar dissolves completely. Bring the mixture to a boil and continue boiling for exactly 4 minutes without stirring after it begins to boil.
  3. Remove the saucepan from the heat immediately. Stir in the vanilla extract.
  4. Arrange the graham cracker sheets in a single layer on the prepared baking sheet, breaking them slightly if necessary to fit snugly.
  5. Pour the hot toffee mixture evenly over the graham crackers, spreading quickly with a heat-safe spatula to cover all the crackers.
  6. Sprinkle the toasted pecans evenly over the hot toffee layer.
  7. Place the chocolate chips over the pecans. Let the bark sit at room temperature for 5 minutes to soften the chocolate slightly.
  8. Spread the softened chocolate chips evenly over the top layer.
  9. Refrigerate the bark for at least 1 hour, or until completely firm.
  10. Once firm, break the bark into irregular pieces. Store in an airtight container at room temperature or in the refrigerator.

Notes

  • Toast your pecans in a dry skillet over medium heat for 5 to 7 minutes until fragrant before using them in the recipe.
  • To prevent a grainy texture, boil the sugar mixture for the full 4 minutes without stirring once it reaches a boil.
  • You can substitute saltine crackers for graham crackers for a sweet and salty variation.
