A high-protein, low-carb, crustless pizza bake that is quick to prepare and satisfying.

Ingredients

  • 16 oz cottage cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Optional toppings: pepperoni, cooked sausage, bell peppers, onions, mushrooms

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the cottage cheese, eggs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix well until smooth.
  3. Spread the cottage cheese mixture evenly into an 8×8 inch baking dish.
  4. Spoon the marinara sauce over the cottage cheese mixture.
  5. Sprinkle the mozzarella cheese evenly over the sauce.
  6. Add your desired optional toppings.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the edges are lightly golden.
  8. Let it cool slightly before serving.

Notes

  • This bake is great for meal prep. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Feel free to experiment with different low-carb pizza toppings.
